Is this Detox Kale Salad low-carb?

Due to the carrots, raisins, and homemade dressing in this detox salad recipe, I would not recommend it for a low-carb diet.

However, by removing the sugary and carby ingredients, you can easily turn this into a keto-friendly detox salad! I recommend using a low-carb dressing rather than the one in this recipe.

Ingredients for Detox Salad

Can I use frozen vegetables?

I recommend only using fresh vegetables. Since this is a cold detox salad, frozen veggies would be too soft and takeaway from the fresh and crisp taste!

Ingredients for Kale & Broccoli Detox Salad

I absolutely love this ingredient list because it's full of COLOR. Isn't there something so tempting about a beautiful and colorful salad? I sure do think so.

Salad Ingredients

  • 3 cups of chopped Kalehalf a head of Red cabbage – chopped
  • 1 small head of Broccoli – cut into florets 3 Carrots – peeled and sliced
  • 1 Red bell pepper – chopped
  • 1 bunch of Flat leaf Italian Parsley – chopped
  • 3 green onions – chopped fine
  • 1 cup of golden raisins
  • 1 cup of Walnuts – chopped
  • 1 cup of Sesame seeds 1 cup of Sunflower seeds

Homemade Detox Salad Dressing Ingredients

  • 1/2 cup of Olive oil
  • 1/2 cup of Lemon juice
  • 1/4 cup of Dijon mustard
  • 1/2 teaspoon of Ginger
  • 1/2 cup of Maple syrup
  • 1/2 teaspoon of garlic salt
  • 1 teaspoon of minced garlic

This recipe definitely veers away from a traditional salad, as it's not strictly lettuce. By using kale and broccoli, we're sticking to only nutrient-rich ingredients.

How To Make a Detox Salad

How to make the detox salad at home:

Since this healthy detox salad doesn't require any cooking, it's pretty quick and easy to make. All you need is a cutting board, a good knife, and a beautiful salad bowl – I use these Pyrex bowls.

Best Detox Salad with Broccoli

Finally, let's get to the salad directions:

  1. First, chop the Kale, cabbage, and Broccoli, and place them, separately, in a colander, and rinse well under cool running water.
  2. Then, place on paper towels to drain.
  3. Peel and slice the carrots. 
  4. Wash the red pepper and chop into bite size pieces. 
  5. Wash the Parsley, chop into fine pieces, and lay on paper towels to drain.
  6. Clean and chop the green onions. 
  7. Place all ingredients that have been washed and chopped into a large salad bowl, and toss. 
  8. Add the raisins, walnuts, sesame seeds, and sunflower seeds, and place in the refrigerator to chill.

To make the dressing:

  1. In a blender, place the olive oil, lemon juice, mustard, ginger, maple syrup, garlic salt, and minced garlic, and blend all ingredients until completely mixed. 
  2. Place the Dressing in the refrigerator until ready to serve. 
  3. Just before serving, shake the dressing well, and pour the dressing over the salad, and toss to coat salad in dressing. 
  4. Serve, and Enjoy!
